Sri Lankan Fried Noodles Recipe – By Malsha – eLanka
Ingredients:
- Vegetable Mix (700g, chopped/cut into sticks):
- Carrot
- Cabbage
- Onion
- Leek
- Red/green bell pepper
- Sprouts
- Egg Noodles (250g, ‘filini pasta’)
- Vegetable Oil
- Chili:
- 1 chili
- Pinch of chili powder
- Spice Sauce Mix (mix together):
- 1 tsp tamarind paste
- 1 tsp sugar
- 1 tsp tomato concentrate
- 1 tbsp curry powder
- 1/2 tsp salt
- 1/2 tsp cumin
- 1 tbsp sweet pepper
- 1/2 tsp ginger powder
- Green Onions/Scallions (for garnish)
Instructions:
- Prepare the Vegetables:
- Chop the vegetables unless you are using a frozen mix.
- Cook the Noodles:
- Cook the pasta in salty water according to the package directions until al dente.
- Drain in a colander and add oil to prevent sticking.
- Stir-Fry the Vegetables:
- In the meantime, in a wok, add onion, chili, and chili powder to 4 tbsp of cold oil. Heat up.
- Add the vegetable mix and stir fry for 3-5 minutes (if using frozen vegetables, stir fry for twice as long). If the mix seems too dry, add more oil as needed.
- Combine Noodles and Vegetables:
- Add the cooked noodles to the wok and mix well while stir-frying.
- Add Spice Sauce:
- Add the spice sauce mix to the wok and continue stir-frying for another 3-4 minutes, ensuring all ingredients are well coated with the spices and oil.
- Serve:
- Serve the noodles hot, sprinkled with green onions cut into 1-inch pieces.
Tips:
- Ensure the pasta is not overcooked to prevent stickiness.
- If the dish tastes bland, add more salt to enhance the flavor.
