  1. Vegetable Mix (700g, chopped/cut into sticks):
    • Carrot
    • Cabbage
    • Onion
    • Leek
    • Red/green bell pepper
    • Sprouts
  2. Egg Noodles (250g, ‘filini pasta’)
  3. Vegetable Oil
  4. Chili:
    • 1 chili
    • Pinch of chili powder
  5. Spice Sauce Mix (mix together):
    • 1 tsp tamarind paste
    • 1 tsp sugar
    • 1 tsp tomato concentrate
    • 1 tbsp curry powder
    • 1/2 tsp salt
    • 1/2 tsp cumin
    • 1 tbsp sweet pepper
    • 1/2 tsp ginger powder
  6. Green Onions/Scallions (for garnish)

Instructions:

  1. Prepare the Vegetables:
    • Chop the vegetables unless you are using a frozen mix.
  2. Cook the Noodles:
    • Cook the pasta in salty water according to the package directions until al dente.
    • Drain in a colander and add oil to prevent sticking.
  3. Stir-Fry the Vegetables:
    • In the meantime, in a wok, add onion, chili, and chili powder to 4 tbsp of cold oil. Heat up.
    • Add the vegetable mix and stir fry for 3-5 minutes (if using frozen vegetables, stir fry for twice as long). If the mix seems too dry, add more oil as needed.
  4. Combine Noodles and Vegetables:
    • Add the cooked noodles to the wok and mix well while stir-frying.
  5. Add Spice Sauce:
    • Add the spice sauce mix to the wok and continue stir-frying for another 3-4 minutes, ensuring all ingredients are well coated with the spices and oil.
  6. Serve:
  • Serve the noodles hot, sprinkled with green onions cut into 1-inch pieces.

Tips:

  • Ensure the pasta is not overcooked to prevent stickiness.
  • If the dish tastes bland, add more salt to enhance the flavor.
