Sri Lanka Ambassador to Thailand granted farewell audience by King and Queen
Ambassador of Sri Lanka to the Kingdom of Thailand and Permanent Representative to the United Nations Economic and Social Commission for Asia and Pacific (UNESCAP), Chaminda I. Colonne and her husband Stephen Senanayake were granted an audience by King Maha Vajiralongkorn Phra Vajiraklaochaoyuhua (Rama X) and Queen Suthida Bajrasudhabimalalakshana of the Kingdom of Thailand to bid farewell to them, the Colombo foreign office said.

The farewell audience took place at the Amphorn Royal Palace on June 26.

J Med Staff Bid Farewell to Rowan Bandarthilak as he Embarks on Residency in Alabama


Rowan Bandarthilak, a dedicated and resilient individual, began his residency in Internal Medicine in Alabama. His journey to this milestone has been marked by perseverance, hard work, and the support of those around him.**

**Educational Journey**

Rowan completed his high school education in Long Beach, California. With a strong foundation, he pursued his undergraduate degree at UCLA, where he developed a keen interest in the medical field. Determined to further his education, Rowan enrolled in medical school in the Caribbean.

**Overcoming Challenges**

Rowan’s path was not without its hurdles. During his time in medical school, he faced significant challenges, including caring for his ill mother and navigating the disruptions caused by the COVID-19 pandemic. Despite these obstacles, Rowan remained steadfast in his commitment to his education and his dream of becoming a physician. His perseverance paid off, culminating in his graduation from medical school and securing a spot in an internal medicine residency program in Alabama.

**Gratitude and Acknowledgements**

Rowan is deeply grateful to everyone who supported him throughout his journey. He extends special thanks to J Med Supplies and John Amirthiah, where he worked for two years. The experience not only provided him with valuable professional skills in the Durable Medical Equipment (DME) field but also fostered long-lasting friendships with the company’s amazing staff.

All life-saving heart surgeries are conducted FREE of charge. Sumeet Tappoo is Chairman and Dr Kripali Tappoo Director of the Hospital. Global Humanitarian and founder of the Sanjeevani hospital is Sadguru Sri Madhusudan Sai. Uma Kumaran, elected MP for Stratford and Bow in the U.K.


British Tamil Uma Kumaran, of the Labour Party, has been elected the Member of Parliament for Stratford and Bow, securing 19,145 votes, following the UK’s general election that took place on July 4, 2024. Kumaran, born in East London, has roots in Sri Lanka. Both her parents are Tamils. Kumaran worked for NHS professionals before joining the Labour party. She first contested in the 2010 local elections in Harrow, London, as one of the Labour Party candidates, but was not elected.

Patrick Sela of Brisbane, Australia and family Visit Machu Picchu in Peru


Patrick Sela’s eldest Granddaughter Neve Sela (25yrs old) has been in South America backpacking since February and our his son Owen (55yrs) wanted to go over and spend a couple of weeks with her in Peru and do Machu Picchu. He invited Patrick to join him on a trip to Peru and catch up with Neve and see a part of South America he had not seen. The trip was a pre 85th Birthday gift from Patrick’s son.

Moussaka

FOR THE MEAT SAUCE:

2 Tbs. extra-virgin olive oil

2 medium yellow onions, finely chopped (about 2 ½ cups)

Kosher salt and freshly ground black pepper

1 lb 80% lean ground beef

½ cup dry red wine

½ cup canned crushed tomatoes

¼ cup finely chopped fresh flat-leaf parsley

1 Tbs. tomato paste

¼ tsp. freshly grated nutmeg

FOR THE EGGPLANT:

3 lb. eggplant (about two medium or 5 to 6 baby eggplant), trimmed and sliced crosswise about ¼ inch thick

Kosher salt

3 Tbs. extra-virgin olive oil; more as needed

Freshly ground black pepper

FOR THE POTATOES:

1 cup extra-virgin olive oil

3 medium russet potatoes (about two and a half pounds), rinsed and dried

Kosher salt

FOR THE BÉCHAMEL:

3 cups whole milk

4 oz. (½ cup) unsalted butter

2 ¼ oz. (½ cup) unbleached all-purpose flour

2 large eggs, beaten

½ oz. finely grated Grana Padano, Parmigiana- Reggiano, or Pecorino Romano (½ cup)

⅛ tsp. Freshly grated nutmeg; more to taste

Kosher salt

MAKING THE MEAT SAUCE

Heat the oil in a 12-inch skillet over medium heat. Add the onions, a generous pinch of salt and a few grinds of pepper. Cook, stirring occasionally until translucent-5 to 8 minutes.

Turn the heat up to medium high. Add the beef, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally and breaking up the meat until browned-7 to 10 minutes. Add the wine; turn the heat down to medium and cook, stirring occasionally until absorbed-about 3 minutes. Add the tomatoes, parsley, tomato paste and nutmeg, stirring to combine. Turn the heat down to low and gently simmer to meld the flavors, stirring once or twice- about 5 minutes. Season to taste with salt and pepper. Set aside. (The meat sauce can be refrigerated for up to 2 days or frozen for up to 3 months).

SALT THE EGGPLANT

Cover the bottom and sides of a large colander with a single layer of the eggplant slices and sprinkle generously with salt. Top with more layers of eggplant, salting each layer until all the slices have been used. Let sit in the sink or over a large bowl for 30 minutes to 1 hour.

PAN-FRY THE POTATOES

Heat the oil in a heavy-duty 12-inch skillet (preferably cast-iron) over medium heat until shimmering hot (about 375°F).

Meanwhile, slice the potatoes crosswise into ¼-inch rounds, discarding the end slices. Working in batches, fry 10-15 slices in a single layer, flipping once until the potatoes are tender-about 4 minutes.

Blot excess oil with paper towels and lightly season with salt.

ROAST THE EGGPLANT

Position racks in the upper and lower thirds of the oven and heat oven to about 350°F.

Rinse the eggplant in cold water to remove excess salt. Press the slices between paper towels or clean kitchen towels to dry, then arrange them in a single layer on two large rimmed baking sheets. Lightly brush both sides off each slice with the olive oil and lightly season both sides with salt and pepper. Roast, flipping once, until tender and lightly browned- 30 to 35 minutes total.

MAKE THE BÉCHAMEL

Heat the milk in a 2-quart saucepan over medium heat until steaming; set aside.Melt the butter in a 4-quart saucepan over medium low heat. Add the flour and cook, whisking constantly, until golden-about 5 minutes. Slowly whisk in the hot milk and then simmer gently, whisking until the raw flour taste is gone and the sauce thickens- about 5 minutes. Turn the heat down to low and gradually whisk in the eggs; whisk vigorously to combine. Remove from the heat. Set aside one Tbs. of the cheese for assembly and add the remaining cheese to the sauce along with the nutmeg and one tsp. salt; Whisk until smooth. Season to taste with more salt and nutmeg.

ASSEMBLE AND BAKE

Position a rack in center of oven and heat the oven to 350°F. Lightly oil a 9×13 -inch baking dish.

Arrange potatoes in an even layer on the bottom of the dish, overlapping the slices like shingles. Sprinkle evenly with 1 tsp. of the reserved cheese.

Arrange the eggplant slices as you did the potatoes and evenly sprinkle with 1 tsp. of the remaining cheese. Spread the meat sauce in an even layer on top of the eggplant. Pour the béchamel over the meat sauce and spread in an even layer. Evenly sprinkle with the remaining 1 tsp. cheese. Bake until the top is golden brown-50 to 60 minutes. Let sit at room temperature for at least 30 minutes before serving

This favorite casserole of Greeks and non-Greeks alike takes some time to prepare, but it is oh so worth the effort!
