Sinhala New Year Special : Oil-Free Vandu Recipe – By Malsha – eLanka
Ingredients:
- 200 ml condensed coconut milk
- 100 g sugar
- 1 cup bread flour
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1 tbsp corn flour
- 2 tbsp hot water
- Pinch of salt
- Bell cups or small porcelain cups for molding the Vandu mixture
Instructions:
- Begin by caramelizing 100g of sugar in a pan. Once caramelized, add 2 tablespoons of hot water and the remaining sugar to make honey. Ensure to reduce the heat to prevent bitterness in the caramel.
- In a mixing bowl, combine bread flour, baking powder, corn flour, and a pinch of salt. Mix well.
- Add vanilla extract to the condensed coconut milk and mix thoroughly. Gradually add the flour mixture to the coconut milk to form a loose Vandu mixture.
- Grease the bell cups or porcelain cups with butter and fill them with the Vandu mixture, filling them up to about 3/4 full.
- Place the filled cups in the steaming part of a rice cooker and steam for approximately 20 minutes.
- After 20 minutes, check the Vandu’s consistency by inserting a toothpick. It should come out clean when the Vandu is fully cooked.
- Carefully remove the Vandu from the cups. It should have a puffed, exploded shape when cooked.
