Ingredients:

  • 350 grams of pitted dates
  • 175 grams of all-purpose flour
  • 50 grams of cashew nuts
  • 150 grams of sugar
  • 3 eggs
  • 1 teaspoon of cinnamon powder
  • 50 grams of semolina
  • 100 grams of butter
  • 25 grams of raisins
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of rose essence
  • 1/4 teaspoon of almond essence
  • 1 teaspoon of vanilla essence

Method:

  1. Start by soaking the pitted dates in hot water for a while, then drain and clean them.
  2. After draining, sprinkle baking soda over the dates and pour hot water over them. Stir with a spoon and let it sit for 30 minutes.
  3. In a separate bowl, combine the flour, baking powder, cinnamon powder, and semolina.
  4. To the soaked dates, add salt and then gradually add the flour mixture. Mix well to form a batter and set it aside.
  5. In another bowl, cream the sugar and butter together until the mixture is light and fluffy. Beat in the eggs one by one and add the vanilla and the other essences.
  6. Combine the wet and dry mixtures, stirring until everything is thoroughly combined. Then, fold in the crushed cashews and raisins.
  7. Preheat your oven to 150°C (300°F) for 10 minutes and prepare a baking tray by lining it with parchment paper.
